Pasta and Vegetables

  • 8 oz Short Pasta (your favorite variety) Cook according to package instructions.
  • 1 cup Cherry Tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 1/2 cup Red Onion (finely chopped)
  • 1 cup Bell Pepper (chopped)
  • 1/2 cup Black Olives (sliced)

Dressing and Seasoning

  • 1/2 cup Italian Dressing
  • 1 tsp Garlic Powder

Preparation Steps

  • Bring a pot of salted water to boil. Add the short pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  • While the pasta cooks, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Slice the black olives.
  • In a large bowl, combine the cooled pasta with the chopped vegetables and olives.
  • Drizzle the Italian dressing over the salad and sprinkle in the garlic powder. Toss everything until well coated.
  • Cover the salad and let it chill in the fridge for at least 15 minutes before serving.

Notes

For extra flavor, add fresh herbs like basil or parsley. Customize with your favorite veggies or proteins, like chicken or feta cheese.
