  • 1 piece ripe mango, pureed Can use frozen mango, thawed before pureeing.
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • to taste salt
  • to taste pepper
  • for garnish chopped green onions

Preparation

  • Start by seasoning the chicken breasts with salt and pepper on both sides.
  • In a bowl, mix the pureed mango, soy sauce, honey, lime juice, and vegetable oil until well combined.

Cooking

  • Heat a skillet over medium heat and add a bit of oil. Cook the chicken breasts for about 5-6 minutes on each side.
  • Once the chicken is nearly cooked through, pour the mango glaze over it and cook for an additional 2-3 minutes.
  • Remove the chicken from the heat and let it rest for a few minutes.
  • Slice the chicken, drizzle with extra glaze if desired, and garnish with chopped green onions.

Notes

Serve with steamed rice or a fresh green salad. Enhance the flavor of the glaze by adding garlic or ginger. Customization options include adding chili flakes for a spicy version or swapping chicken for tofu or tempeh for a vegetarian option. Best served fresh.
