Ingredients
  

For the crust

For the filling

  • 16 ounces Cream cheese Must be at room temperature for easy mixing. Can use vegan cream cheese for a dairy-free option.
  • 0.75 cups Baileys Irish Cream For a non-alcoholic version, use Irish cream-flavored coffee creamer.
  • 1 cup Granulated sugar Consider using a sugar alternative for a healthier option.
  • 1 cup Heavy cream Whip until stiff peaks form before adding. Mascarpone can be used instead.
  • 3 large Eggs Use room temperature eggs for better incorporation.
  • 8 ounces Chocolate ganache Prepare by melting chocolate with cream until smooth.

Instructions
 

Preparation of the Crust

  • Preheat your oven to 325°F (163°C).
  • In a bowl, combine 1.5 cups crushed graham crackers with 0.5 cups melted unsalted butter.
  • Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes until lightly golden.

Making the Filling

  • In a mixing bowl, beat 16 ounces of room-temperature cream cheese and 1 cup granulated sugar until smooth and creamy, about 3 minutes.
  • Slowly mix in 0.75 cups of Baileys Irish Cream to the cream cheese mixture, blending until fully incorporated.
  • Add 3 large eggs, one at a time, mixing well after each addition.
  • Gently fold in 1 cup of whipped heavy cream into the mixture.

Baking and Cooling

  • Pour the filling into the cooled crust and bake in the preheated oven for 50-60 minutes.
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for an hour to prevent cracks.
  • Afterward, refrigerate for at least 3 hours.

Serving

  • Pour 8 ounces of chocolate ganache on top before serving.
  • Slice carefully to show off the layers and drizzle extra ganache on top.
  • Serve with whipped cream, chocolate shavings, or fresh berries.

Notes

Experiment with flavored extracts like vanilla or almond for an added burst of flavor. Customize with toppings like nuts or caramel sauce.
