Ingredients
  

Main Protein

  • 1 pound Salmon fillets Rich in flavor and healthy fats. Pat dry and season with salt and pepper.

Aromatics & Vegetables

  • 1 pound Asparagus Trim woody ends and rinse. Bright green stalks preferred.
  • 1 pint Cherry tomatoes Sweet and juicy; wash and leave whole.

Liquids/Dairy

  • 3/4 cup Balsamic vinaigrette Use high-quality vinaigrette for best flavor.

Seasoning

  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the asparagus and cherry tomatoes, then spread them evenly in a baking dish.
  • Place the salmon fillets on top of the veggies and sprinkle with salt and pepper.
  • Drizzle the balsamic vinaigrette over the salmon and veggies.

Cooking

  • Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and asparagus is tender.
  • Remove from oven and let it rest for a few minutes.

Serving

  • Gently plate the salmon, asparagus, and tomatoes.

Notes

For added flavor, sprinkle fresh herbs like basil or dill before serving. Customize by swapping out proteins or vegetables as desired. Serve with a sprinkle of lemon juice for an extra zing!
