Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs Cut into bite-sized pieces, season well, and lightly sauté until cooked through.

For the Bang Bang Sauce

  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha Adjust to control spiciness according to your taste.
  • 1 tablespoon honey
  • 1 clove minced garlic

For the Bowl

  • 2 cups white or brown rice Cook according to package instructions. Quinoa is a good alternative.

Vegetables

  • 1 cup shredded carrots Chop evenly for uniform cooking and presentation.
  • 1 cup shredded red cabbage Chop evenly for uniform cooking and presentation.
  • 1 cup sliced cucumbers Chop evenly for uniform cooking and presentation.

Optional Finishing Ingredients

  • 1 tablespoon sesame seeds Add flavor and color.
  • 1/4 cup fresh cilantro Use green onions as an alternative.

Instructions
 

Cook the Chicken

  • Heat a tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 6-8 minutes or until the chicken is golden brown and fully cooked.

Prepare the Sauce

  • While the chicken is cooking, combine mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic in a bowl. Mix until smooth and set aside.

Cook the Rice

  • In a separate pot or rice cooker, cook your rice according to the package instructions.

Assemble the Bowl

  • Once the chicken is cooked and the rice is ready, assemble your bowls by placing a base of rice, topped with cooked chicken, shredded carrots, sliced cucumber, and red cabbage.

Drizzle with Sauce

  • Generously drizzle the Bang Bang sauce over your assembled bowls.

Garnish and Serve

  • Top with sliced green onions, sesame seeds, and fresh cilantro if desired. Serve immediately.

Notes
