Ingredients
  

Main Protein

  • 2 pounds Boneless skinless chicken breasts Cube them for even cooking.

Starch/Pasta

  • 2 medium Sweet potatoes Dice into even pieces.

Liquids/Dairy

  • 1 cup BBQ sauce Choose your favorite tangy or smoky sauce.

Aromatics & Vegetables

  • 4 cups Coleslaw mix Pre-packaged for convenience.

Optional Finishing Ingredients

  • 1 cup Zesty pickles Use your favorite pickles for an extra kick.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the diced sweet potatoes in olive oil, salt, and pepper, then spread them on a baking sheet.

Cooking

  • Roast the sweet potatoes for about 25-30 minutes until they’re soft and slightly caramelized.
  • In a large skillet over medium heat, add a bit of oil and the cubed chicken. Cook for around 5-7 minutes until browned and cooked through.
  • Pour in the BBQ sauce and stir. Allow it to simmer for about 5 minutes for the flavors to meld together.
  • In a bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, salt, and pepper. Mix until well combined.

Assembly

  • In serving bowls, layer the roasted sweet potatoes, BBQ chicken, and coleslaw.
  • Top with zesty pickles before serving.

Notes

Enhance flavor by marinating the chicken in BBQ sauce for a couple of hours before cooking. Customize the coleslaw by adding apples or nuts for extra crunch. Serve with additional BBQ sauce on the side for dipping.
