Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs and vanilla, mixing until well combined.
  • In another bowl, whisk together the flour and baking powder. Gradually add this mixture into the wet ingredients, mixing just until there are no lumps.
  • Pour the batter into a greased round cake pan and smooth out the top with a spatula.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Filling and Assembly

  • While the cake cools, whip the heavy cream and powdered sugar until stiff peaks form.
  • Once cooled, slice the cake in half horizontally. Spread the whipped cream filling generously in between the two layers, placing the top back on.

Notes

For enhanced flavor, consider adding a splash of almond extract to the cream. Customize with chocolate shavings or fruit fillings. Serve chilled for a refreshing dessert.
