  • 2 cups cooked quinoa Cook according to package instructions.
  • 1 lb grilled chicken, sliced Use skinless chicken breasts for best results.
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Use seasonal berries for optimal flavor.
  • 1/4 cup sliced almonds Optional for added crunch.
  • 3 cups mixed greens Can include arugula, spinach, or your choice.
  • 1/4 cup feta cheese (optional) Adds creaminess; can be omitted.
  • 1/4 cup strawberry-balsamic vinaigrette Drizzle over the salad.

Instructions
 

Preparation

  • Cook quinoa according to package instructions and let it cool.
  • While quinoa is cooking, grill the chicken breasts and slice them once cooked.
  • In a large bowl, combine the cooled quinoa, grilled chicken, mixed berries, and mixed greens.
  • Add sliced almonds and feta cheese (if using) to the bowl.
  • Drizzle the strawberry-balsamic vinaigrette over the salad.
  • Toss all the ingredients together gently.
  • Serve immediately or chill for later enjoyment!

Notes

To enhance flavor, add a squeeze of lemon or lime. For a vegetarian option, substitute chicken with chickpeas. Leftovers can be stored in the refrigerator for up to 3 days.
