  • 2.25 teaspoons active dry yeast (fresh)
  • 1 tablespoon sugar
  • 2 large eggs (room temperature)
  • 4 cups all-purpose flour (spoon and leveled)
  • 1 teaspoon salt
  • 0.25 cup unsalted butter (room temperature, cubed)
  • 0.25 cup unsalted butter (softened)
  • 0.5 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 0.5 cup Biscoff cookie butter (melted)
  • 1 cup Biscoff cookies (crumbled)
  • 0.5 cup heavy cream (poured around rolls)

Icing Ingredients

  • 8 ounces cream cheese (softened)
  • 0.25 cup unsalted butter
  • 2 cups powdered sugar (sifted)
  • 0.25 cup Biscoff cookie butter
  • 1 teaspoon pure vanilla extract
  • 0.5 cup Biscoff cookie crumbles

Instructions
 

Preparation

  • In a bowl, mix warmed milk, yeast, and sugar. Let it sit for 5-10 minutes until bubbly.
  • Add eggs and mix well. Then stir in flour and salt until a dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth.
  • Place the dough in a greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.

Assembly

  • Roll out the dough into a large rectangle, about 1/4 inch thick.
  • Spread softened butter evenly over the dough, then sprinkle with brown sugar, cinnamon, and crumbled Biscoff cookies.
  • Roll the dough tightly from the long end, then slice into 12 equal rolls.
  • Place rolls in a greased baking pan. Pour heavy cream around the rolls and let rise for another 30 minutes.

Baking

  • Preheat oven to 350°F and bake for 25-30 minutes until golden brown.
  • For the icing, beat cream cheese, unsalted butter, powdered sugar, Biscoff cookie butter, and vanilla until smooth.
  • Drizzle the icing over warm rolls and garnish with Biscoff cookie crumbles.
