  • zest of 1 lemon Grate finely to avoid bitterness.
  • juice of 1 lemon Use fresh juice.
  • 1 cup white chocolate chips Fold in before baking.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time, adding in the vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to your butter mixture until just combined.
  • Gently fold in the lemon zest, lemon juice, and white chocolate chips.
  • Drop spoonfuls of dough onto lined baking sheets.
  • Bake for about 10-12 minutes, or until the edges are lightly golden. Allow them to cool slightly on the sheet before transferring to a wire rack.
