  • Cook your rice according to package instructions, usually about 15-20 minutes. Fluff with a fork once done.
  • In a skillet, heat the shredded chicken over medium heat. Pour in the buffalo sauce and stir well. Cook for about 5-7 minutes until heated through.
  • While the chicken heats, sauté diced vegetables in another pan over medium heat for 3-5 minutes until slightly tender but still crunchy.
  • Combine the buffalo chicken and sautéed veggies in a large bowl, mixing well.
  • Spoon the cooked rice into serving bowls, then top with the buffalo chicken mixture and drizzle with blue cheese dressing if desired.
