Ingredients
  

Main Ingredients

  • 1 can white beans (like cannellini or great northern) Drain and rinse before use.
  • 1/2 cup buffalo sauce Adjust based on spice tolerance.
  • 8 small corn or flour tortillas Warm to soften before filling.
  • 1 avocado, sliced Choose a ripe avocado for best texture.
  • 1 cup shredded lettuce Freshly shredded for best flavor.
  • 1/2 cup diced tomatoes Chop finely for balance in each taco.
  • 1/4 cup diced red onion Prepare finely diced for better texture.
  • cilantro for garnish (optional) Adds fresh flavor.
  • lime wedges for serving Adds brightness to the dish.

Instructions
 

Cooking the Beans

  • In a skillet over medium heat, add the drained and rinsed white beans. Cook for about 2-3 minutes until they begin to warm through.

Adding Buffalo Sauce

  • Pour in 1/2 cup of buffalo sauce, stirring well to coat the beans. Cook for another 5 minutes, letting the sauce simmer and get absorbed into the beans.

Preparing Tortillas

  • While the beans are cooking, warm your tortillas in a separate dry pan over low heat for about 1-2 minutes on each side, until soft and pliable.

Assembling Tacos

  • Take a warmed tortilla and add a generous scoop of the buffalo bean mixture. Top with sliced avocado, shredded lettuce, diced tomatoes, and red onion.

Garnishing and Serving

  • Finish each taco with cilantro and a squeeze of lime for a pop of flavor. Serve immediately while still warm.

Notes

Store leftover tacos in an airtight container in the refrigerator for up to 3 days. For freezing, store the buffalo bean mixture in a sealed bag for up to 3 months.
