Ingredients
  

Main Protein

  • 1.5 pounds skinless boneless chicken thighs Cut into bite-sized chunks; alternatives include chicken breasts.

Starch/Pasta

  • 4 pieces naan bread Warm before serving; alternatives include quinoa or cauliflower rice.
  • 2 cups steamed rice Cook according to package instructions.

Seasoning/Spice Blend

  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 0.5 teaspoon cayenne Adjust for heat preference.
  • 1 teaspoon garam masala

Liquids/Dairy

  • 1 cup tomato sauce Use as the base of the sauce.
  • 0.5 cup heavy cream Full-fat cream is recommended.

Aromatics & Vegetables

  • 1 medium onion Diced; sauté until translucent.
  • 3 cloves garlic Minced; add during sautéing.

Optional Finishing Ingredients

  • 2 tablespoons fresh parsley Chopped; add just before serving.

Instructions
 

Preparation

  • Season the chicken thighs with salt, garlic powder, sweet paprika, and curry powder in a bowl.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat and brown the chicken for 5-7 minutes.
  • Sauté the minced garlic and diced onions in butter for 3-5 minutes until soft and translucent.
  • Pour in the tomato sauce, sugar, black pepper, and salt, and let simmer for 5 minutes.
  • Gradually whisk in the heavy cream and simmer for another 5 minutes.
  • Stir in the garam masala and additional curry powder, simmer for 2 more minutes.
  • Garnish with freshly chopped parsley, if using, and serve hot.

Notes

Enhance flavor by marinating the chicken in yogurt. Customize with vegetables like peas. Store leftovers in the fridge for up to 3 days.
