  • 2 pieces boneless chicken breasts Cut into bite-sized pieces.
  • 8 oz pasta (fettuccine or penne) Cook according to package instructions.
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 piece bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Parmesan cheese for serving Grated.
  • Fresh parsley for garnish

Cooking

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, cooking until soft.
  • Add minced garlic and Cajun seasoning to the skillet, stirring for about a minute.
  • Cut the chicken breasts into bite-sized pieces. Add them to the skillet, cooking until they are fully cooked and no longer pink, about 6-8 minutes.
  • Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and cook until the sauce thickens slightly.
  • Add the cooked pasta to the skillet, mixing everything together until the pasta is coated with the creamy sauce. Season with salt and pepper to taste.
  • Serve hot, topped with grated Parmesan cheese and fresh parsley.

Notes

For extra flavor, add a squeeze of lemon juice before serving. Customize by adding vegetables like mushrooms, spinach, or zucchini. Serve with crusty bread to soak up the delicious sauce. Stores leftovers in an airtight container in the refrigerator for up to 3 days.
