  • 1 cup Crab (or Imitation Crab), diced Ensure freshness; alternative options include cooked shrimp or tofu.

Dairy & Liquids

  • 1/4 cup Mayonnaise Adjust to taste; can substitute with Greek yogurt for a lighter option.
  • 2 oz Cream Cheese Optional; helps to add richness.
  • 2 tbsp Soy Sauce Adds flavor; optional to adjust.

Garnish

  • 1 tbsp Sesame Seeds Optional, for garnish.

Preparation

  • Start by slicing the cucumbers into 1/8-inch rounds. Lay them out in a colander and sprinkle with a pinch of salt to help draw out excess moisture. Let them sit for about 5 minutes.
  • In a mixing bowl, combine the mayonnaise and cream cheese until smooth. If you like, add a little soy sauce for extra flavor.
  • While the cucumbers are draining, chop the scallions, radishes, and avocado. Keep the avocado cubed right before serving to prevent browning.

Assembly

  • In a large bowl, add the drained cucumbers, diced crab, chopped scallions, radishes, and avocado. Gently fold in the creamy mixture until all pieces are well coated.
  • Sprinkle sesame seeds on top for a little crunch! You can serve the salad immediately or let it chill in the fridge for about 10 minutes to enhance the flavors.
  • Just before serving, taste the salad and adjust the seasoning with a little extra soy sauce or mayonnaise if needed.

Notes

For added flavor, consider adding lime juice right before serving. Customize the salad with other vegetables like bell peppers or carrots. It's best not to freeze this salad, as the texture of cucumbers and avocado does not hold up well when thawed.
