  • 2 tablespoons Butter Use unsalted butter to control salt content.
  • 1 small Onion Chopped
  • 3 cloves Garlic Minced
  • 2 tablespoons All-Purpose Flour Whisk with butter to create a roux.
  • 4 cups Broth Chicken or vegetable broth.
  • 4-5 medium Yukon Gold Potatoes Peeled and diced.
  • 1 cup Milk or Half-and-Half Stir in towards the end of cooking.
  • 2 cups Cheddar Cheese Shredded.

Seasoning and Garnish

  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper To taste.
  • 1 teaspoon Thyme Dried.
  • 2 tablespoons Fresh Parsley Chopped for garnish.

Preparation

  • Melt the butter in a large pot over medium heat. Ensure it doesn’t brown.
  • Add the chopped onion and cook for about 5 minutes until translucent.
  • Stir in the minced garlic for another minute.
  • Sprinkle the flour into the pot and whisk with the onion and garlic to form a roux.
  • Gradually add the broth while whisking to avoid lumps. Bring to a gentle boil.
  • Add the diced Yukon Gold potatoes. Cover and simmer for about 15-20 minutes until fork-tender.
  • Reduce heat to low and stir in the milk or half-and-half and shredded cheddar cheese until melted.
  • Season the soup with salt, pepper, and thyme. Serve hot garnished with fresh parsley.

This soup can be served with crusty bread, grilled cheese sandwiches, or a fresh salad. For variations, consider adding crispy bacon, or vegetables like carrots or celery.
