  • 4 large bell peppers Choose vibrant colored peppers for visual appeal.
  • 1 pound lean ground beef Can be substituted with ground turkey for a lighter option.
  • 1 cup cooked brown rice Use any leftover rice for convenience.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix different cheeses.
  • 1/2 cup diced tomatoes Can use fresh or canned tomatoes.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Adjust to taste.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a skillet over medium heat, cook the onion and garlic until soft.

Cooking

  • Add the ground beef and cook until browned. Drain excess fat.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  • Fill each bell pepper with the beef mixture and place them in a baking dish.
  • Top each filled pepper with shredded cheese.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

Notes

Serve with a fresh salad or garlic bread for extra flavor. Consider customizing the filling with your favorite ingredients.
