Ingredients
  

Main Protein

  • 1.5 lbs boneless, skinless chicken thighs Cut into 1/2-inch bite-sized pieces. Alternatives include chicken breasts.

Starch

  • 12 pieces small corn tortillas Warm on a skillet before serving for enhanced flavor.

Seasoning/Spice Blend

  • 2 tbsp olive oil
  • 1/4 cup fresh lime juice Important for flavor; alternatives can include vinegar.
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper Taco seasoning can be used as an alternative.

Aromatics & Vegetables

  • 1/2 cup white onion Finely diced. Green onions can be a milder substitute.
  • 1/2 cup fresh cilantro Chopped.

Optional Finishing Ingredients

  • 1 each lime wedges For serving; enhances flavor.
  • 1 each avocado Optional topping.
  • 1 each salsa Optional topping.

Instructions
 

Preparation

  • Heat 2 tbsp of olive oil in a large skillet over medium heat. Add the chicken pieces and cook for about 8-10 minutes, stirring occasionally, until browned and cooked through.
  • In a small bowl, mix the lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Cooking

  • Pour the seasoning mixture over the cooked chicken, stirring well. Allow to simmer for about 2-3 minutes.
  • Warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side until soft and pliable.

Assembly

  • Spoon the chicken mixture onto each tortilla. Top with finely diced onions and chopped cilantro.
  • Arrange the tacos on a serving platter and add lime wedges on the side.

Notes
