Ingredients
  

Marinade

  • 1 pound flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Bowl Ingredients

  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled (optional)
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions
 

Preparation

  • In a medium bowl, mix lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and black pepper.
  • Place the flank steak in a shallow dish and pour the marinade over it. Let it marinate for at least 15 minutes.

Cooking

  • Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness.
  • Remove the steak from heat and let it rest for 5 minutes before slicing it against the grain.

Assembly

  • To assemble the bowls, place a scoop of rice at the bottom. Add sliced steak, black beans, corn, cherry tomatoes, avocado, red onion, and feta cheese if using.
  • Garnish with extra cilantro and serve with lime wedges on the side.

Notes

For enhanced flavor, let the steak marinate longer if time allows. Customize toppings; add your favorite veggies or sauces. Serve in a wooden platter for a rustic touch. Leftovers can be kept in the refrigerator for up to 3 days in an airtight container.
