Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).

  • In another bowl, beat softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Blend in vanilla extract, coconut milk, lime juice, and lime zest until smooth.
  • Gradually fold the dry ingredients into the wet mixture until just combined.

Baking

  • Spoon the batter into lined cupcake tins, filling each about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick comes out clean.
  • Let the cupcakes cool in the pan for 5-10 minutes before transferring them to a wire rack.

Frosting

  • Prepare the frosting by beating together unsalted butter, powdered sugar, cream cheese, coconut milk, lime juice, lime zest, and coconut extract until smooth.
