  • 1 lb corned beef Diced into bite-sized pieces.
  • 6 cups beef broth Store-bought or homemade.
  • 4 large potatoes, diced Regular or Yukon gold potatoes preferred.
  • 3 large carrots, sliced Chopped finely for even cooking.
  • 1/2 head cabbage, chopped Ensure some crunch remains.
  • 1 large onion, chopped Sautéed for flavor depth.
  • 2 cloves garlic, minced Fresh preferred; can substitute with garlic powder.
  • to taste salt and pepper Always taste while seasoning.
  • for garnish fresh parsley Chopped for an appealing finish.

Preparation

  • Heat a large pot over medium heat. Add chopped onions and minced garlic, cooking until they soften, about 3-4 minutes.
  • Add the diced corned beef to the pot, cooking for another 5-7 minutes until it starts to brown.
  • Pour in 6 cups of beef broth, then toss in diced potatoes and sliced carrots. Bring the mixture to a boil.
  • Once boiling, reduce the heat and let it simmer for about 30 minutes, until the potatoes are tender.
  • Stir in the chopped cabbage and season with salt and pepper. Cook for an additional 10-15 minutes until the cabbage is tender but still crunchy.
  • Before serving, taste your soup and adjust the seasonings if needed.
  • Ladle your soup into bowls and sprinkle with fresh parsley for a beautiful finish.

Notes

Consider adding a teaspoon of Worcestershire sauce for enhanced flavor. Customize with favorite veggies like green beans or peas. A dollop of sour cream or sprinkle of cheese can enrich the dish.
