  • 8 oz Linguine Can be swapped for fettuccine or penne
  • 1 lbs Steak Sirloin or Ribeye; thinly sliced flank or skirt steak can be used
  • 4 medium Carrots Bell peppers or zucchini can be used as alternatives
  • 3 tbsp Olive Oil For sautéing and roasting
  • 1/2 cup Butter Use unsalted for best control over seasoning
  • 4 cloves Garlic Fresh minced garlic
  • 2 tbsp Lemon Juice Adds brightness to the sauce
  • 1 tbsp Dijon Mustard Adjust to find your preferred flavor balance
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Crushed Red Pepper Flakes Optional for heat
  • to taste Salt Essential for seasoning
  • to taste Black Pepper Essential for seasoning
  • 1/4 cup Parmesan Cheese Can swap in Pecorino Romano
  • 2 tbsp Fresh Parsley Other herbs like thyme or rosemary can provide alternatives

Instructions
 

Preparation

  • In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.
  • Season the sliced steak with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the steak and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.

Cooking

  • In the same skillet, add the carrots and sauté for about 2-3 minutes. Then, add the minced garlic and cook until fragrant.
  • Lower the heat and add butter, lemon juice, Dijon mustard, paprika, garlic powder, onion powder, and crushed red pepper flakes to the skillet. Stir until the butter melts and the sauce is well combined.
  • Return the steak to the skillet along with the drained pasta. Toss until the steak and pasta are coated with the sauce. Add grated Parmesan cheese and fresh parsley for extra flavor. Adjust seasoning as needed.
  • Plate the Cowboy Butter Steak Linguine and enjoy!

Notes

For serving: Serve in shallow bowls to highlight the colorful ingredients. Pair with garlic bread or a fresh green salad.
