  • 1 can black beans, rinsed and drained Can substitute with chickpeas.
  • 1 cup corn, frozen or canned Thaw frozen corn before use.
  • 1 piece bell pepper, diced (any color) Use your favorite color for vibrancy.
  • 1/4 cup red onion, diced Can substitute with green onion if preferred.
  • 1/4 cup fresh cilantro, chopped Parsley can be used as a substitute.

Dressing

  • 1/4 cup lime juice Fresh lime juice is recommended.
  • 2 tablespoons olive oil Can use avocado oil as an alternative.
  • 1 teaspoon cumin Adjust to taste.
  • to taste Salt and pepper Season according to preference.

Instructions
 

Preparation

  • Cook pasta according to package instructions; drain and let cool.
  • In a large bowl, combine cooked pasta, black beans, corn, diced bell pepper, red onion, and chopped cilantro.

Dressing

  • In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  • Pour dressing over the pasta mixture and toss until well-coated.

Serving

  • Taste and adjust the seasoning if necessary.
  • Serve immediately or chill in the refrigerator for an hour for enhanced flavors.

Notes

For serving, present in a large glass bowl to show off the colorful ingredients. Pair with grilled chicken or fish for a complete meal.
