  • 4 cups sweet corn (fresh, frozen, or canned) Dried well if frozen or canned.
  • 8 slices bacon, cooked and crumbled Reserve a bit for garnish.
  • 1 cup cheddar cheese or pepper jack cheese, shredded Cheese adds creaminess and flavor.
  • 1/2 cup ranch dressing Store-bought is recommended for convenience.
  • 1/4 cup mayonnaise For extra creaminess.
  • 2 tablespoons lime juice Freshly squeezed preferred.
  • to taste salt Start with a pinch and adjust as needed.
  • to taste black pepper Start light and adjust based on preference.
  • 1/4 cup green onions, sliced
  • 1 medium red bell pepper, diced Or use jalapeno for a spicier version.

Preparation

  • In a large mixing bowl, combine the sweet corn and crumbled bacon.
  • Add the shredded cheese, ranch dressing, mayonnaise, and lime juice. Mix well.
  • Season with salt and black pepper, adjusting to your taste preference.
  • Gently fold in the sliced green onions and diced red bell pepper.
  • Transfer the mixture to a serving dish and garnish with reserved bacon.
  • Chill in the refrigerator for 10 minutes before serving to let the flavors meld.

Notes

Add a sprinkle of chili powder for an extra kick. Customize with your favorite ingredients, like avocados or black beans.
