  • 8 oz Penne pasta Cook until al dente.
  • 1 lb Chicken breast (sliced) Use boneless, skinless pieces.
  • 2 tbsp Cajun seasoning Adjust according to spice preference.
  • 1 tbsp Olive oil For cooking chicken.
  • 2 cups Heavy cream Do not let boil.
  • 1 cup Grated Parmesan cheese For a creamy sauce.
  • 1 clove Garlic (minced) Sauté to release fragrance.
  • to taste Salt and pepper For seasoning.
  • for garnish Chopped parsley Adds color and fresh flavor.

Instructions
 

Preparation

  • Begin by boiling water in a large pot. Add 8 oz of penne pasta and a dash of salt, cooking according to package instructions until al dente, usually around 10 minutes. Drain and set aside, reserving some pasta water for later.

Cooking

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add 1 lb of sliced chicken breast and sprinkle with 2 tbsp of Cajun seasoning. Stir and cook for about 5-7 minutes, or until the chicken is golden brown and no longer pink in the center.
  • Once the chicken is cooked, stir in 1 clove of minced garlic. Sauté for about 1 minute until fragrant, making sure not to let it burn.
  • Pour 2 cups of heavy cream into the skillet, stirring to combine with the chicken. Allow the mixture to simmer gently for about 3-4 minutes until it thickens slightly.
  • Sprinkle in 1 cup of grated Parmesan cheese, stirring to incorporate it into the sauce. Let it cook for another 2-3 minutes until the cheese melts completely.
  • Add the drained penne pasta to the skillet, tossing everything together. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
  • Remove from heat, taste, and adjust seasoning with salt and pepper if needed. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days. For long-term storage, freeze in a freezer-safe container for up to 2 months. Consider adding sautéed bell peppers or spinach for extra flavors.
