  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic. Sauté until soft.
  • Add diced chicken breasts to the pot, cooking until browned on all sides.
  • Stir in mixed vegetables and dried thyme, cooking for another 5 minutes.
  • Pour in the chicken broth and bring to a boil. Then, add the orzo pasta and reduce to a simmer.
  • Cook for about 10 minutes or until the orzo is tender.
  • Stir in the heavy cream and season with salt and pepper. Cook for an additional 2-3 minutes until creamy.
  • Serve hot, garnished with fresh parsley.

Notes

Add a squeeze of lemon juice for a bright flavor. Customize with your favorite veggies or protein alternatives like turkey. Serve with a sprinkle of grated cheese on top for extra richness. Store leftovers in the refrigerator for up to 3 days in an airtight container. Cool completely, then freeze in freezer-safe bags for up to 2 months. Thaw in the refrigerator before reheating.
