  • ½ cup chopped onion Sauté until translucent for a sweeter taste.
  • 2 cloves minced garlic Add later in cooking to prevent burning.
  • 1 cup spinach or kale Cook down until wilted for the best texture.
  • ½ cup shredded cheddar cheese Use freshly shredded cheese for better melting.
  • 1 teaspoon dried thyme Toast spices briefly to enhance their flavors.
  • ½ teaspoon paprika Toast spices briefly to enhance their flavors.
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Freshly cracked pepper enhances aroma.

Cooking Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.
  • Stir in the orzo pasta and pour in the chicken broth. Bring to a gentle boil, then reduce heat to low, cover, and let it simmer for about 8-10 minutes until the orzo is tender.
  • Once the orzo is cooked, stir in the heavy cream, dried thyme, paprika, salt, and pepper. Allow it to simmer on low for another 2-3 minutes until creamy.
  • Add the spinach or kale and shredded cheddar cheese, stirring until melted and the greens are wilted, about 2-3 minutes.
  • Remove from heat and garnish with fresh parsley and lemon zest. Serve immediately.

Notes

Add a splash of lemon juice for extra brightness. Customize with your favorite veggies like bell peppers or mushrooms. Serve with a sprinkle of red pepper flakes for a hint of heat.
