Ingredients
  

For the Chicken

  • 2-3 pieces boneless, skinless chicken breasts (or thighs)
  • Salt & pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp Dijon mustard (optional)
  • 1 tbsp chopped parsley or chives (for garnish)

For the Mashed Potatoes

  • 1.5 lbs Yukon gold or russet potatoes, peeled and cubed
  • 1/2 cup milk or cream
  • 2-3 tbsp butter
  • Salt, to taste

For the Glazed Carrots

  • 3 cups baby carrots or sliced carrots
  • 2 tbsp butter
  • 1 tbsp brown sugar or honey
  • 1/4 tsp salt
  • Optional: pinch of cinnamon or thyme

Preparation

  • Season the chicken breasts with salt, pepper, garlic powder, thyme, and rosemary.

Cooking the Chicken

  • Heat olive oil and butter in a pan over medium heat. Add the chicken and cook until golden brown on both sides, about 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and let it simmer for 5 minutes.
  • Stir in heavy cream, Parmesan cheese, and Dijon mustard, if using. Cook until the sauce thickens slightly. Remove from heat and garnish with parsley or chives.

Cooking the Potatoes

  • While the chicken cooks, boil the potatoes in salted water. Cook until tender, about 15-20 minutes.
  • Drain the potatoes and mash with milk, butter, and salt to taste.

Cooking the Carrots

  • In another pan, melt butter and add carrots, brown sugar, and salt. Cook until carrots are tender and glazed, about 5-7 minutes.

Serving

  • Plate the creamy herb chicken alongside a generous portion of mashed potatoes.
  • Arrange the glazed carrots on the side, adding color to your dish.
  • Garnish with extra herbs for an appealing presentation.
  • Pair with a refreshing beverage like white wine or sparkling water.

Notes

Enhance flavor with a squeeze of lemon juice. You can substitute chicken with turkey or tofu. Serve with a side salad for added freshness.
