  • 1 pound ground beef
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 cups pasta (penne or your choice)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Preparation

  • Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Add ground beef to the skillet and cook until browned, breaking it apart with a spatula.
  • Stir in chopped sun-dried tomatoes and fresh spinach. Cook for 2-3 minutes until the spinach wilts.
  • Pour in heavy cream and mix well. Allow it to simmer for about 5 minutes.
  • Stir in grated Parmesan cheese, and season with salt and pepper to taste.
  • Add the cooked pasta to the skillet and toss everything together until well combined.

Notes

Enhance flavor by adding red pepper flakes for a bit of heat. Customize with your favorite vegetables like bell peppers or zucchini. Try serving with a side of garlic bread or a fresh green salad.
