Ingredients
  

Eggs

Filling

  • 3 tbsp mayonnaise For a creamy texture; can use Greek yogurt or avocado.
  • 1 tsp yellow mustard Adds tanginess; can substitute with spicy brown or Dijon mustard.
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp vinegar or lemon juice Balance flavors; a dash of hot sauce can be added.

Optional Coloring

  • 2-3 drops green or red food coloring To dye egg whites for a spooky effect.

Garnish

  • 1-2 tbsp paprika For a spooky finish.
  • 6 slices black or green olives For 'eyeballs'; add just before serving.

Preparation

  • Boil the Eggs: Place eggs in a pot, cover with cold water, bring to a boil. Reduce heat and simmer for 10-12 minutes. Cool in ice water.
  • Prepare the Filling: Peel and cut eggs in half lengthwise, scoop out yolks into a bowl.
  • Mix in the Goodies: Add mayonnaise, mustard, salt, pepper, and vinegar/lemon juice to the yolks. Mash until smooth.
  • Optional Coloring: Use food coloring to dye egg whites by dipping in colored water.
  • Fill the Egg Whites: Spoon or pipe yolk mixture back into egg whites.
  • Garnish Your Creation: Sprinkle paprika and add olive slices on top for decoration.
  • Serve and Enjoy: Arrange on a platter and serve.

Notes

For added flavor, consider smoked paprika or chili powder. Can customize by adding bacon, jalapeƱo, or fresh herbs.
