Seasoning/Spice Blend

  • 1 tablespoon kosher salt Adjust based on preference.
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon rosemary

Optional Finishing Ingredients

  • 1 whole lemon Cut into wedges for serving.
  • 1/4 cup fresh parsley Chopped for garnish.

Preparation

  • Pat the chicken thighs dry with paper towels.
  • In a large bowl, combine olive oil and your spice mixture. Coat the chicken thighs thoroughly.

Cooking

  • Place the seasoned chicken thighs skin-side up in a large baking dish, ensuring they are spaced apart.
  • Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  • Remove from the oven and let it rest for 5 minutes before serving.
  • Serve garnished with fresh parsley and lemon wedges.

Notes

You can marinate the chicken in the spice mixture for a few hours or overnight for enhanced flavor. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
