Ingredients

  • 1.5-2 pounds boneless, skinless chicken breasts Cut into bite-sized pieces for even cooking.

Sauce and Dairy

  • 2.5 cups Alfredo sauce Divided for usage.
  • 1 cup shredded mozzarella cheese Mix in during the last few minutes of cooking.
  • 0.5 cup grated Parmesan cheese Add with mozzarella cheese.

Pasta

  • 20 ounces refrigerated cheese tortellini Alternately, 19 ounces frozen tortellini can be used.

Seasonings

  • 3 cloves garlic, minced Fresh minced garlic adds depth of flavor.
  • 0.5 teaspoon black pepper Adjust if needed.
  • 0.25 teaspoon salt Adjust if using salted Alfredo sauce.

Optional Garnish

  • to taste fresh parsley For garnish.

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces.
  • In the crockpot, combine chicken, minced garlic, pepper, and salt.
  • Pour in 2 cups of the Alfredo sauce and mix to coat the chicken.

Cooking

  • Cover the crockpot and set it to low, cooking for 4 hours.
  • Check for doneness around the 3-hour mark to ensure chicken is tender.
  • In the last 15-20 minutes, add the tortellini to the crockpot.
  • Pour in the remaining 0.5 cup of Alfredo sauce and add the mozzarella and Parmesan cheese.
  • Cover again until the cheese is melted and bubbly, about 5-10 minutes.
  • Serve immediately with a sprinkle of fresh parsley for garnish.

Notes

Consider adding sautéed mushrooms or spinach for an extra boost of flavor.
