Ingredients
  

Pasta and Vegetables

  • 8 oz rotini pasta
  • 1 cup dill pickles, diced
  • 1/2 cup red onion, diced
  • 1/2 cup celery, diced

Dressing

  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp pickle juice
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Preparation

  • Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  • In a large bowl, mix the cooked pasta, diced dill pickles, red onion, and celery.
  • In a separate small bowl, combine mayonnaise, Dijon mustard, pickle juice, salt, and pepper. Mix until smooth.
  • Pour the dressing over the pasta mixture. Stir gently to combine everything evenly.
  • Garnish with fresh dill if desired. Serve chilled or at room temperature.

Notes

Add a dash of hot sauce for a spicy kick! Customize with cooked chicken or bacon for added protein. Serve with extra pickles on the side for those who love them.
