Ingredients
  

Main Protein

  • 1.5 lbs boneless, skinless chicken breasts or thighs Trim off any excess fat and cut into strips for even cooking.

Aromatics & Vegetables

  • 1 large red bell pepper Slice into strips.
  • 1 large yellow bell pepper Slice into strips.
  • 1 large green bell pepper Slice into strips.
  • 1 medium yellow onion Slice into strips.

Seasoning/Spice Blend

  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes

Liquids/Dairy

  • 1 14.5 oz can diced tomatoes Drained for moisture and tanginess.

Optional Finishing Ingredients

  • 1/2 cup chopped fresh cilantro For serving.
  • lime wedges For serving.
  • sliced avocado For serving.
  • sour cream For serving.
  • shredded cheese For serving.
  • warm corn or flour tortillas For serving.

Instructions
 

Preparation

  • Start by cutting the chicken into strips.
  • Slice the bell peppers and onion into strips.
  • In a small bowl, combine the spices.

Assembly

  • Place the chicken strips at the bottom of the crockpot.
  • Layer the sliced vegetables and pour the drained diced tomatoes over everything.
  • Evenly sprinkle your spice mixture over the top.

Cooking

  • Cover and set the crockpot to low for 6 to 8 hours or high for 4 hours.
  • When done, stir everything and serve on warm tortillas.
