Ingredients

  • 1 pound raw shrimp, peeled & deveined
  • 1 tablespoon taco seasoning
  • 14 ounces coleslaw mix
  • 1/2 cup plain yogurt
  • to taste Fresh lime juice

Instructions
 

Preparation

  • In a bowl, toss the shrimp with taco seasoning until well coated.
  • While the shrimp cooks, mix the coleslaw with yogurt and a squeeze of lime juice in another bowl.

Cooking

  • Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for about 3-4 minutes until they are pink and opaque.
  • Warm the corn tortillas in a dry skillet for about 30 seconds on each side.

Assembly

  • Assemble the tacos by placing a few shrimp on each tortilla, topping with the coleslaw mixture.
  • Squeeze fresh lime juice over the tacos and serve immediately.

Notes

These tacos are best served immediately. For a tropical twist, add diced avocado or mango. Customize toppings with jalapeƱos or fresh cilantro for extra flavor.
