Preparation

  • Start by lining or spraying your slow cooker to prevent sticking.
  • Set the slow cooker to low heat for gentle cooking.

Cooking

  • Place the chicken breasts in the slow cooker.
  • In a bowl, combine chicken broth, olive oil, lemon juice, oregano, minced garlic, salt, and black pepper. Stir well and pour over the chicken.
  • Layer the halved cherry tomatoes and Kalamata olives over the chicken.
  • Cover the slow cooker and cook on low for about 6 hours.
  • About 30 minutes before serving, gently stir in the crumbled feta cheese.
  • Once cooked, scoop out portions onto plates and sprinkle with fresh parsley for garnish.
