Ingredients

Brownie Layer

  • 1/2 cup Unsalted Butter Melted; can be substituted with coconut oil for dairy-free.
  • 1 cup Granulated Sugar Can substitute with brown sugar for a richer taste.
  • 2 large Large Eggs Should be at room temperature.
  • 1/2 cup All-Purpose Flour Can use almond flour for a gluten-free version.
  • 1/3 cup Unsweetened Cocoa Powder Sift to remove lumps.
  • 1/4 teaspoon Salt Just a pinch to enhance flavor.

Cheesecake Filling

  • 16 oz Cream Cheese Softened at room temperature.
  • 1/2 cup Granulated Sugar
  • 1/2 cup Sour Cream Should be at room temperature.
  • 1/4 cup Heavy Cream Whip until soft peaks form.
  • 1 teaspoon Vanilla Extract Use pure vanilla for best results.
  • 1/2 cup Semi-Sweet Chocolate Chips Ensure even distribution throughout the cheesecake.

Instructions

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix melted butter and granulated sugar until smooth. Add eggs one at a time, and stir in the flour, cocoa powder, and salt until just combined. Spread this batter in a greased springform pan.

Baking the Brownie Layer

  • Bake the brownie base for about 20 minutes, or until a toothpick comes out with a few moist crumbs.

Cheesecake Filling

  • In a separate bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, then mix in sour cream, heavy cream, and vanilla. Fold in chocolate chips gently.

Assembly and Final Baking

  • Pour the cheesecake mixture over the baked brownie layer in the springform pan, smoothing the top.
  • Return the pan to the oven and bake for an additional 40-50 minutes. The center should be set but slightly jiggly.

Cooling and Serving

  • Allow the cheesecake to cool at room temperature for an hour before refrigerating for at least 4 hours or overnight.

Notes

For an extra flavor boost, consider adding espresso powder to the brownie base. Serve with fresh berries or chocolate sauce.
