  • 4 pieces boneless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs

  • 2 pieces eggs, beaten
  • as needed Olive oil for cooking

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix breadcrumbs, Parmesan cheese, minced garlic, Italian herbs, salt, and pepper.
  • In another bowl, beat the eggs.
  • Dip each chicken breast into the beaten eggs and then coat with the breadcrumb mixture, pressing firmly.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Sear each chicken breast for 3 minutes on each side until golden brown.
  • Transfer the chicken breasts to a baking sheet and bake for an additional 15 minutes or until fully cooked.

Notes

For extra garlic flavor, add more minced garlic to the breadcrumb mix. Customize by swapping breadcrumbs for crushed nuts for added crunch. Serve with a squeeze of lemon to brighten the flavors.
