  • 1 large head large head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the cauliflower florets, olive oil, minced garlic, thyme, salt, and pepper. Mix well to coat the cauliflower evenly.
  • Spread the cauliflower mixture onto a baking sheet in a single layer.

Cooking

  • Roast in the oven for 20 minutes, stirring halfway through, until the cauliflower is tender and golden brown.
  • Once out of the oven, sprinkle the roasted cauliflower with Parmesan cheese and return to the oven for an additional 2-3 minutes until the cheese is melted.
  • Remove from the oven and garnish with chopped parsley before serving.

Notes

For extra flavor, squeeze fresh lemon juice over the cauliflower after roasting. Customize with your favorite herbs, such as rosemary or oregano. Serve with a dipping sauce like ranch or yogurt for added fun.
