Ingredients
  

For the vegetables

  • 2 cups baby potatoes, halved Choose firm potatoes, avoid sprouting.
  • 1 bunch asparagus, trimmed Choose bright green, firm stalks.

For the seasoning

  • 3 tablespoons olive oil Extra virgin provides the best taste.
  • 4 cloves garlic, minced Be careful not to burn.
  • 1 teaspoon salt Substitutable with sea salt.
  • 1/2 teaspoon black pepper Freshly ground enhances flavor.
  • 1 tablespoon fresh herbs (rosemary, thyme, or parsley) Fresh should be added towards the end of cooking.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the halved baby potatoes, trimmed asparagus, minced garlic, olive oil, salt, and black pepper. Toss everything well to coat evenly.

Cooking

  • Spread the mixture on a large baking sheet in a single layer.
  • Place the baking sheet in the preheated oven and roast for about 25-30 minutes.
  • About 5 minutes before you’re done with roasting, add the chopped fresh herbs to the pan.
  • Check that the potatoes are soft inside and roast a little longer if needed.

Serving

  • Remove from the oven, let cool for a minute, and transfer to a serving bowl.

Notes

Try adding lemon zest to brighten the flavor. This dish is perfect for impressing your guests!
