Ingredients

  • 4 pieces boneless, skinless chicken breasts Thin-sliced for even cooking.

Liquids/Dairy

  • 1 cup salsa verde Use mild or spicy salsa according to preference.
  • 1 cup pepper Jack cheese Shredded.

Seasoning/Spice Blend

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Aromatics & Vegetables

  • 1/4 cup fresh cilantro Chopped finely for garnish.

Optional Finishing Ingredients

  • 2 pieces lime wedges For serving.

Instructions
 

Preparation

  • Mix olive oil, lime juice, cumin, salt, and pepper in a bowl.
  • Marinate the chicken breasts in this mixture for at least 20 minutes.
  • Preheat the grill to medium-high heat (about 400°F).

Cooking

  • Place the marinated chicken on the grill and cook each side for about 6-7 minutes until juices run clear.
  • Top each chicken breast with a spoonful of salsa verde and close the grill lid for 2 minutes.
  • Add shredded pepper Jack cheese on top and close the lid for an additional 2-3 minutes, until melted.
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Serving

  • Slice the chicken and top it with fresh cilantro and lime wedges before serving.

Notes

For extra flavor, consider adding minced garlic to the marinade. You can customize the spice level according to your preference with different types of salsa verde. Serve with tortilla chips for a fun starter.
