Ingredients
  

For the crust

  • 1 cup Almond Flour Gives the bars a nutty flavor and a gluten-free base.

For the filling

  • 2 large Eggs Bind the ingredients; at room temperature for best results.
  • 1/2 cup Fresh Lemon Juice Gives the bars their bright, tangy flavor.
  • 1 tablespoon Ground Dried Hibiscus Flowers Adds beautiful color and unique tartness.
  • 1/4 cup Granulated Sugar or Sweetener of Choice Adds sweetness to contrast the tartness.
  • Zest of 1 lemon Lemon Zest Adds aromatic flavor; use a microplane to zest.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  • In a mixing bowl, combine 1 cup almond flour, 1/4 cup melted coconut oil, 1/4 cup honey, and 1/4 teaspoon salt. Mix until crumbly and press firmly into the bottom of the prepared baking dish.
  • Bake the crust for 15 minutes, or until lightly golden.
  • In the same bowl, whisk together 2 eggs, 1/2 cup fresh lemon juice, 1 tablespoon ground dried hibiscus, 1/4 cup sugar, and the lemon zest until well combined.

Baking

  • Pour the filling over the hot crust and bake for an additional 15-20 minutes until set but still slightly jiggly in the middle.
  • Allow to cool at room temperature for about 30 minutes, then chill in the refrigerator for another hour.

Serving

  • Once chilled, lift the bars out using the parchment paper and cut into squares.
  • Dust with powdered sugar if desired and serve.

Notes

For a tropical twist, add shredded coconut to the crust. These bars store well in the refrigerator for up to 5 days or can be frozen for up to 3 months.
