Main Ingredients

  • 1 pound Ground beef (80/20) Use ground turkey or chicken as alternatives.
  • 4 medium Potatoes (diced) Russet, Yukon gold, or sweet potatoes can be used.
  • 1 medium Onion (chopped) Green onions can be used as a milder alternative.
  • 2 tablespoons Olive oil For sautéing.

Seasonings

  • to taste Salt
  • to taste Pepper
  • optional Garlic powder Can be added for extra flavor.
  • optional Paprika Can be added for extra flavor.

Preparation

  • Gather all your ingredients. Dice the potatoes and chop the onion.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook for about 5-7 minutes, breaking it up until it’s browned and there’s no pink remaining.
  • Stir in the chopped onions and cook for another 3-4 minutes until the onions are tender and translucent.
  • Add the diced potatoes, salt, and pepper. Stir well to combine everything.
  • Cook for around 10-15 minutes until the potatoes are cooked through and golden brown, stirring occasionally.
  • Add garlic powder or paprika to taste and let it sit for an additional minute for the flavors to meld.
  • Remove from heat and serve hot.

Notes

For a flavorful twist, add fresh herbs like parsley or chives before serving. You can also customize with extra veggies or a fried egg on top for brunch.
