  • 2 pounds baby potatoes Wash and halve any larger ones for even cooking.
  • ½ cup chopped bacon Use chopped strips that can easily crisp up in the oven.
  • ¼ cup honey Use pure honey for the best flavor.
  • 2 tablespoons olive oil Use quality extra-virgin olive oil for depth of flavor.
  • salt To taste; enhances the overall flavor.
  • pepper To taste; fresh ground pepper gives a better taste.
  • fresh parsley Chopped, for garnishing.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the baby potatoes thoroughly and halve any larger ones.
  • In a large mixing bowl, combine the halved potatoes, chopped bacon, honey, olive oil, salt, and pepper. Toss everything together until the potatoes are well coated.
  • Transfer the potato mixture to a large baking sheet, spreading it out in an even layer.

Cooking

  • Roast the potatoes in the preheated oven for about 30-35 minutes, or until they turn golden brown and crispy on the edges. Stir halfway through.
  • When done, the potatoes should be tender inside and crispy on the outside.
  • Remove from the oven and let them cool for a couple of minutes. Drizzle with a little extra honey if desired, and sprinkle with chopped parsley before serving.

Notes

Enhance flavor with garlic or fresh herbs. Customize by adding vegetables like carrots or Brussels sprouts.
