Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pan over medium heat.
  • Add the diced onion and sauté for about 3-4 minutes, until it begins to soften and turn translucent.

Cooking

  • Add the chicken thighs to the pan. Cook for 5-7 minutes, stirring occasionally, until they are browned on all sides.
  • Stir in the minced garlic and cook for an additional minute.
  • Add 1.5 cups of rice and mix well.
  • Pour 3 cups of chicken broth (or water) into the pan. Then, add 1 cup of barbecue sauce and 0.5 cup of honey. Stir everything together until well combined.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for about 20 minutes.
  • Once the rice is cooked, remove the pan from heat and let it sit, covered, for an additional 5 minutes.
  • Fluff the rice with a fork to separate the grains and distribute the chicken evenly throughout.
  • Serve your Honey BBQ Chicken and Rice warm, garnished with fresh herbs if desired.

Notes

For added flavor, consider marinating the chicken in BBQ sauce for a few hours before cooking. Customize by adding your choice of vegetables such as bell peppers or broccoli. Serve with a sprinkle of fresh herbs or green onions for a burst of color.
