Ingredients
  

For the Chicken & Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • to taste Salt & black pepper

For the Vegetables

  • 2 large sweet potatoes (peeled & cubed)
  • 1 lb green beans (trimmed)
  • as needed Olive oil (for roasting)

Preparation

  • In a bowl, mix honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper to create the marinade.
  • Place chicken breasts in the marinade and allow them to soak for at least 15 minutes.
  • Preheat the oven to 400°F (200°C).
  • While the chicken marinates, prepare the sweet potatoes and green beans.
  • Spread cubed sweet potatoes and green beans on a large baking sheet.
  • Drizzle with olive oil, season with salt and pepper, and toss to coat.

Cooking

  • Remove chicken from marinade and place it on the same baking sheet with vegetables.
  • Bake for 25-30 minutes, or until the chicken is cooked through and sweet potatoes are tender.
  • Let rest for a few minutes before serving.

Notes

Add a pinch of red pepper flakes for extra heat. Customize veggies with your favorites, like bell peppers or broccoli. Garnish with fresh herbs like parsley or cilantro for an added touch.
