Main Ingredients

For Whipping

  • 4 large Egg Whites Whip to soft peaks; pasteurized egg whites are recommended.
  • 1/4 teaspoon Cream of Tartar Stabilizes egg whites; lemon juice or vinegar can be used as an alternative.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with butter or margarine.
  • In a large bowl, mix together 1 cup of all-purpose flour, 1/2 cup of sugar, and 1/4 teaspoon of salt.
  • Melt 1/2 cup of margarine and pour it over the dry mixture, stirring until combined.

Mixing

  • Beat in 4 large egg yolks and 1 cup of warm milk into the mixture.
  • Gently fold in 3 cups of chopped rhubarb and 1/2 cup of shredded coconut.

Whipping and Baking

  • In a separate bowl, whip 4 large egg whites with 1/4 teaspoon of cream of tartar until soft peaks form.
  • Fold the egg whites gently into the batter.
  • Pour the mixture into the prepared baking dish and bake for 30-35 minutes or until golden and a toothpick comes out clean.

Notes

Enhance with a dash of vanilla extract, or customize with fresh berries or nuts. Can serve with whipped cream or yogurt.
