Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and sauté for about 3-4 minutes until translucent.
  • Stir in minced garlic and diced jalapeños, sauté for another 2-3 minutes until fragrant.

Cooking

  • Add the chicken breasts to the pot, cooking for 5-6 minutes on each side until cooked through.
  • Pour in the chicken broth and bring it to a gentle simmer. Let it cook for 15 minutes.
  • Reduce heat and stir in heavy cream and softened cream cheese; whisk until smooth.
  • Sprinkle in cumin, paprika, salt, and pepper to taste.
  • Remove chicken, shred it with two forks, and return it to the pot.
  • Top with shredded cheese and optional bacon before serving.

Notes
