Ingredients
  

For the crust

  • 2 cups vanilla wafer cookies (finely ground) Graham crackers can be used as an alternative.
  • 5 tablespoons unsalted butter (melted) Dairy-free option: use melted coconut oil.
  • 2 tablespoons light brown sugar Granulated sugar can be used but may alter flavor.

For the filling

  • 1 tablespoon lime zest Zesting limes before juicing enhances flavor.
  • 5 large egg yolks A flaxseed mixture can be used as a binding agent.
  • 22 ounces sweetened condensed milk Evaporated milk with added sugar can be a lighter option.
  • 1 cup freshly squeezed lime juice Bottled lime juice can be used in a pinch.

For the topping

  • 1 cup heavy whipping cream Whipped coconut cream can be used as a dairy-free substitute.
  • 2 tablespoons powdered sugar Granulated sugar can be used but won’t dissolve as easily.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix finely ground vanilla wafer cookies with melted butter and light brown sugar until combined. Press this mixture firmly into the bottom of a greased 9x9-inch baking dish. Bake for about 10 minutes until lightly golden.
  • In another bowl, whisk together egg yolks and sweetened condensed milk until smooth. Gradually mix in freshly squeezed lime juice and lime zest.

Baking

  • Pour the filling over the baked crust and return the pan to the oven. Bake for 15 minutes until the filling is set but slightly jiggly in the center. Allow it to cool completely before chilling in the refrigerator for at least 1 hour.

Serving

  • While the bars chill, beat heavy whipping cream with powdered sugar until soft peaks form.
  • Cut the chilled bars into squares, top with whipped cream, and garnish with extra lime zest if desired.

Notes

For storing, keep in the refrigerator for up to 5 days or freeze for up to 2 months. Thaw in the fridge before serving. You can also enhance flavor with a touch of lime zest in the whipped cream.
