  • 1 each zest of lemon
  • 1/2 each juice of lemon
  • a pinch salt

Instructions
 

Preparation

  • In a bowl, combine rolled oats, almond milk, Greek yogurt, and a pinch of salt.
  • Add the honey or maple syrup, lemon zest, and lemon juice to the oat mixture. Stir well to combine.
  • Gently fold in the blueberries, ensuring they are evenly distributed.
  • Spoon the mixture into individual jars or containers. Seal them tightly with lids.
  • Refrigerate overnight, or for at least 6 hours, to let the oats soak and soften.

Serving

  • In the morning, give the oats a good stir, adding more milk if needed. Enjoy!
  • Layer the oats with extra blueberries and lemon zest on top for a beautiful look.
  • Serve with a handful of nuts or a dollop of extra yogurt for added texture.

Notes

For added flavor, sprinkle in some cinnamon or vanilla extract. Customize by swapping blueberries for strawberries or raspberries. Consider topping with granola for a delightful crunch right before serving.
